Ingredients

  • 2 lbs grass-fed beef shank (bone-in for maximum collagen)

  • 2 tbsp Fat & Fire Bourbon Barrel Smoked Beef Tallow

  • 1 tbsp Fat & Fire Spicy Seasoning (choose Mild or Hot)

  • 1 head garlic, peeled and smashed

  • 1 tbsp apple cider vinegar (raw, unfiltered)

  • 1 tsp dried oregano

  • 1 tbsp fresh thyme (or 1 tsp dried)

  • 1/2 tsp sea salt (to taste)

  • 1/2 tsp cracked black pepper

  • 2 cups grass-fed beef bone broth (homemade or quality store-bought)

  • Optional: 1 cup chopped carrots and celery (if tolerated)


Instructions

  1. Preheat oven to 300°F (150°C).

  2. In a large Dutch oven or oven-safe pot, heat Fat & Fire tallow over medium-high heat.

  3. Sear beef shanks on all sides until golden brown (about 4 minutes per side).

  4. Add smashed garlic, spices, and herbs to the pot. Stir for 1 minute until fragrant.

  5. Pour in bone broth and apple cider vinegar, scraping up browned bits.

  6. Cover and place in the oven. Bake for 4–5 hours, or until the meat is fork-tender and falling off the bone.

  7. Remove from oven, shred meat, discard bones (or save for broth), and stir to combine.

  8. Serve warm with optional gut-friendly sides (like mashed cauliflower or sautéed cabbage).
